I never liked pancakes until I became pregnant; then I wanted them every single weekend. I still like them on Sunday mornings now and then. Everyone who's had these has raved over them, though I'm not sure why. Just a basic pancake recipe from my Betty Crocker cookbook. Easy to make (almost as quick as boxed mixes) and very yummy. I make them in a nonstick skillet and don't need to use any margarine in the pan.
1 large egg
1 cup all-purpose flour
3/4 cup milk
1 tablespoon granulated or packed brown sugar
2 tablespoons vegetable oil
3 teaspoons baking powder
1/4 teaspoon salt
margarine or shortening
Beat egg in medium bowl until fluffy. Beat in remaining ingredients except margarine just until smooth. For thinner pancakes, stir in additional one to two tablespoons milk. Heat griddle or skillet over medium heat or to 375 degrees F. Grease griddle with margarine if necessary. For each pancake, pour slightly less than 1/4 cup batter from cup onto hot griddle. Cook pancake until puffy and dry around edges. Turn and cook other side until golden brown.
