I found this recipe on Allrecipes.com and altered it a bit.
2 cups pelled and shredded potatoes
1 Tablespoon grated onion, or some onion powder
1 egg, beaten
2 Tbs all purpose flour
1 teaspoon salt
1/2 cup vegetable oil
Place the potatoes in a dish towel and wring out moisture from potatoes. In a medium bowl, stir the potatoes, onion, egg, flour and salt. In a large skillet over medium high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down slightly to form 1/4 inch thick patties. Brown on one side, turn and brown on the other. Drain on paper towels. Serve hot with ketchup, sour cream and applesauce.
