Anyone have experience with making a dessert that includes peaches? We got some peaches at the store on Sunday, and while they're ripe and smell delicious, the texture is kind of odd and so they're not great for eating out of hand. I have five, I'm not sure if that's enough for a pie or a cobbler or something similar. Or if I should even try to bake with them since the texture is weird.
First off, Happy Birthday!! I'll be 29 in a few weeks, too, so you'll have to let me know how it is. :)
As for your peaches, here's my favorite, no-bake peach pie recipe from when I was a kid:
9" graham cracker pie crust
5 fresh peaches, peeled and sliced
30 big marshmallows or 100 mini (6 oz)
1/2 cup milk
1 cup whipping cream
Cook milk and marshmallows until dissolved and cool. Whip whipping cream and fold into marshmallow mixture. Spread a bit of the mixture onto bottom of pie crust. Layer sliced peaches and top with remaining mixture and sprinkle with graham cracker crumbs. Refrigerate!
