I bought two pints of blueberries on Monday, they were on sale for 99 cents a pint. The last time I had some, I made two batches of blueberry muffins and froze them for post-baby. I'd like to use them in another bakery recipe that I can freeze, but I'm stuck at muffins. Any ideas? Nothing with a strudel topping, the crumbs don't seem to freeze well. I'm thinking maybe blueberry pancakes, stacked in freezer bags with waxed paper between to re-heat.
How about making a kind of blueberry jam? Just cook the blueberries with some lemon juice, sugar, and vanilla bean, with maybe 5-10g of pectin. Then, make some vanilla bean shortbread cookies and make little sandwiches with them.
Or just make some blueberry-banana bread :-)
Or make some blueberry sorbet if you have an ice cream machine. If not, take the base and just make blueberry granita!

The jam is a great idea (and the granita!). Unfortunately none of us likes blueberries unless they're baked into something. The banana bread idea might work!
